The first day of summer is Friday, June 20, according to the rest of the planet. Saigon Snow sits in what is arguably the trendiest “food hall’ in the city. Rainbow Sno-Cones has been chilling out Orlando since 1994. Koko Kakigori uses seasonal ingredients to craft some of the most gorgeous desserts in Orlando. and is a great place to bring kids and grandkids when its scorching. and when its kids want to enjoy a few extras at a later date. and. More has vegan and gluten-free fillings and fillings, and it plays ‘em down, ’em’em in indoor “mall’s indoor ” “emem” space. and “crisp down, cool out, cool down’m in the shade,” it says. and it has a “lil’ cooler to stash a few extra extras to enjoy later.’’

Weatherwise right now, Florida, as state-based comedian Josh Wicks Robinson (aka @omgitswicks) often says, “is Floridaing.”

And while this anthropomorphized Florida seems cognizant of many things — invasive species, hurricanes and Pub subs, for example — it doesn’t seem to know when summer starts.

It felt like Orlando enjoyed an extended spring this year before the subtropical heat finally gave way to our unofficial and semi-endless summer. Now, we’re well into it. Daily rains, temps in the 90s. All the things.

Except that according to the rest of the planet, the first day of summer is Friday, June 20.

And from now until Sept. 22 — which is when Orlando will predictably refuse to recognize fall — you’re going to want to cool yourself down. Here’s a starter list of how to do it with food when the mood strikes you.

Saigon Snow

Saigon Snow sits in what is arguably and currently the trendiest “food hall” in the city: A place that shared honors alongside two-Michelin-starred Sorekara in the Orlando Sentinel Foodie Awards’ top spot this year, a place whose culinary director Chef Hung Huynh was recently featured on the “Today Show” and a place where gorgeous Vietnamese shaved ice makes a perfect dessert for any of the goodies its microstalls are slinging.

“Our snow is fluffy, light, creamy, yet not too sweet,” says Huynh, who employs fresh, local and tropical fruits in Saigon Snow’s signature desserts. “Other shaved ice are often made with sweet water to freeze as ice or use milk powder and water to make it. We use fresh, whole milk and condensed milk.”

The result is a snow that tastes fresh fallen, of course. Flurries are expected all summer long.

Rainbow Sno-Cones

On the other end of the spectrum, Rainbow Sno-Cones has been chilling out Orlando since 1994 — in its current location since 2013 — and it has remained a classic — consistent in both fluffy product and fun to be had. This includes in-store snowball tossing, courtesy of proprietor Bob Homer, whose young customers never tire of the practice and whose older ones — some of whom were once younger ones — are grateful to recapture some of those summer vibes.

“We’ve been doing this for more than 30 years,” says Homer. “Sometimes we can see three or even four generations in one visit.”

Outside of adding the ocassional new flavor — “we already have over 200,” he notes — there’s nothing trendy here. Or hipster. That it shares strip-mall space with Winter Park’s Donut King venue puts it in good, solid and relatable company. Flavors a’plenty in confines both festive and humble make Rainbow Sno-Cones decidedly old school and inadvertently tres cool without even trying.

Koko Kakigori

So unique. So beautiful. So perfectly representative of the fleeting nature of icy desserts, as yours will melt consistently while you’re enjoying it in the shade of the courtyard outside this tiny, Mills 50 stand. What’s extra nice is that the team at Koko Kakigori not only uses seasonal ingredients to craft some of the most gorgeous desserts in the city — not to mention handmade dishes in which to showcase them — they also provide straws so you can enjoy each as both icy delight and a sweet, light sip to cool you from the inside out.

Morelia Paletas

There are more than a few Mexican groceries around town that serve house-made paletas out of both counter operations and reach-in freezers. But this one, located at the Florida Mall, is a lil’ bit extra — and a great place to bring kids and grandkids when its scorching out, since it sits right next to the Florida Mall’s indoor playspace. Bring ’em in, wear ’em out, cool ’em down and cruise ’em gloriously into a carseat nap on the ride home. You might even bring a cooler bag to stash a few extras to enjoy at a later date. Morelia has vegan and gluten-free options, fancy fillings and chocolate- and nut-dipped delights right alongside simple frozen-fruit pops.

Nuri’s Tavern

Tavern pizza may be the star at this downtown haunt — and deservedly so — but thanks to the homemade soft serve they are crafting it’s also a top-tier choice for cooling down in serious style. Sure they’ve got vanilla, of course, and it’s nothing to sneeze at, but pistachio fans will go completely wild for this housemade ice cream with its dreamy-intense nutty flavor. With toppings of caramel and a heap of roasted pistachios, you’ll find yourself dreaming about the stuff once you have it. Pro tip: Come extra hungry and try the pizza, too. Just remember to leave room.
