There I was, scrolling through recipes (as one does when trying to decide what to eat for lunch while also procrastinating other responsibilities), when I stumbled across a recipe that was billed as the “best sandwich on planet Earth.” I don’t know about you, but if someone is going to make a claim that strong, I’m absolutely going to test it.

This sandwich, dubbed Kar’s Summer Sandwich by content creator Cortney LaCorte (@cheesegal), looked really tasty, but I was curious to know if it was as incredible as she promised. There was only one way to find out.

Then there’s the avocado. Smashed onto one slice of bread, it brings the kind of rich creaminess that pairs beautifully with both the acidity of the tomatoes and the saltiness of the Muenster cheese. On the other slice of bread, mayo adds even more richness—because honestly, when is mayo not a good idea on a sandwich?

Muenster cheese is mild but melts beautifully if you choose to toast it, and it’s got just enough stretch to make every bite feel a little extra satisfying. I seasoned the whole thing with salt and pepper before pressing the sandwich together, and even though the filling squished out a little, I wouldn’t change a thing. Pro tip- toast the bread lightly because you still want it to be soft enough to bite through without everything spilling out immediately.

Tips For Making It Your Own

This sandwich is endlessly customizable, which is another reason I fell in love with it. Want more protein? Add a slice of turkey or a fried egg. Looking for more tang? Swap out the mayo for a herby aioli. I’ve even considered layering in a few arugula leaves for peppery bite or a little bacon for crunch.

Not a fan of Muenster? No problem. Havarti, provolone or mozzarella would all work beautifully. Just make sure the cheese you pick complements the creaminess of the avocado and the acidity of the tomato dressing. For a little extra flavor boost, sprinkle in some everything bagel seasoning on the avocado.

You can also play with the bread. I used gluten-free sandwich bread and loved it both toasted and untoasted. Sourdough would add a nice tang, while a good ciabatta roll would really soak up the dressing. Just keep in mind that the juicier the tomato, the sturdier your bread needs to be unless you’re okay with a full-on fork-and-knife sandwich experience.
