Ina Garten shared a recipe for a Raspberry Royale on Instagram. It’s a two-ingredient drink that is perfect for summer because it’s fruity, bubbly, and every sip tastes like the summer season. “There’s always a reason to celebrate when it’s the weekend!” Garten captioned a recent Instagram post in which she shares just how simple making a Raspberry Royale — a recipe from her Barefoot in Paris cookbook — is. “Pour 1 teaspoon of red raspberry liqueur into each champagne glass,” she continues. “When guests arrive, pop the cork and fill each glass with champagne.”
And if you feel like you want to make the drink even more special, there’s one extra ingredient you can include. “I don’t do it here, but you can also add 2 or 3 raspberries as garnish,” Garten continues. “I love a drink that looks elegant, but it’s so easy to make!”
And because this drink is so simple (and reminiscent of a classic mimosa), one person in the comments said it could be a great brunch drink. “I think the raspberries put this firmly in the breakfast drink category. Runs to liquor store,” they wrote. But because it’s made with champagne (or prosecco), Raspberry Royale could also be used for celebratory occasions, too. “That was our signature wedding cocktail!” another person added.
Another commenter said they appreciated not only how simple the cocktail is, but also how it’s flexible for guests. “Guests could choose to have sparkling water instead of champagne and still feel completely festive!” they wrote. Sparkling water or sparkling cider could be just as delicious as champagne, and you could swap out the liquor for raspberry jam or compote to make the entire cocktail alcohol-free!
