Comments: Comments The violation for the dish machine is a repeat from the last inspection. If it happens a third time the faciilty will be required to log the concentration. It is a good idea to do this anyway since the sign on the machine says to check it daily.
Make sure that the rack holding the pizza slicers and the slicers themselves and all in-use utensils are being cleaned at a minimum of every 4 hours. The dish machine was not dispensing and sanitizer because the bucket was empty. A tub of carrot sticks and a tub of pepperoni were past their 7-day use by dates. Employees observed working in the food service area without proper hair restraints, i.e., beard nets. There is no quat test kit in the facility for monitoring the concentration of the sanitizing solution at the 3C sink. The filter on the door of the prep unit has an excessive amount of dust built up on it.
The doors of the prep unit need cleaned.
The right side of the left Traulsen by the prep unit has old food on it.
The floor of the Traulsen freezer needs cleaned.
The green racks in the right Traulsen by the prep unit have old food on them.
The doors of the walk-in cooler have sauce splattered on them. There are missing tiles by the floor sink of the dish machine. As a result, the area cannot be kept clean. The gap betweek the 3C sink and the wall has black slime in and around it.
